Brodetto is a dish of the common people and it was not the custom to use quality food fish for it. Many types of fish are used for the fishermen's brodetto, mostly those that are at hand or have not been sold that day, even though it is said that there is no brodetto without a piece of conger eel. Use a vessel made of clay, if possible. Put olive oil, chopped onion, garlic, parsley, a tomato, grains of pepper and the fish into the vessel. Cover the fish completely with cold water, add some wine or some vinegar so the fish does not fall apart. If it is possible, add some seawater and let until the water boils.
