Clean the insides, the gills and scales of the fish. Salt the fish, dip it in oil and grill on a hot grill. During the grilling smear the fish with a small branch of rosemary dipped in olive oil. Grill the fish on both sides. It is grilled when the thickest part of the fish becomes soft, or if the meat separtes from the bones when touched. The grilled fish is seasoned with parsley and olive oil and served with Swiss chard or boiled potatoes.
